I have no idea how that would be a flavor for crisps, but Squirrel is really tasty and I'm sure the Cajuns eat them. People in rural areas have gotten over the ';eeewww'; factor so predominant in urban America and have realized that all sorts of non traditional critters (Squirrels, Rabbits, Possum, Raccoon...) are tasty and nutritious. Just because you can't buy it at the supermarket doesn't make it gross
Cajun Squirrel
~ squirrels,cut into serving pieces, amount depends upon how many you can eat
~ olive oil
~ 1 large onion
~ 1 large green bell pepper
~ 2 cloves garlic
~ Cajun spice (Tony Chachere's recommended)
~ 2 tbsp Tabasco sauce
~ 4 tbsp ketchup
~ 1 tbsp Gumbo File seasoning
~ cooked rice
In a deep pot or dutch oven, heat some olive oil.
Season the squirrel on all sides with the Cajun seasoning. Add to the hot oil and turn to brown on all sides. Continue to cook until done.
Place the onion, bell pepper and garlic in a blender. Cover with water and chop. Add to the pot when squirrel is done.
Sprinkle the added vegetables with Cajun seasoning.
Add the Tabasco sauce, ketchup and the Gumbo File. Stir to mix well.
Serve over the cooked rice.

I know they eat squirrel in the south, but I'm not sure about the chips you're talking about. They also eat gator, nutri, opposum and other wild life. **Nutri is a water rat in LA that was brought in by accident**.
Saw it on the food channel in Bizarre Foods just yesterday. Personally, I like gator. Don't think I'd eat rat or rodent, tho. Lest I have to.
